Shannon grew up outside of Kansas City, MO and attended the University of Missouri-Columbia, where she earned her B.S. in Nutrition and Fitness. After graduating, she moved to Las Vegas to earn a Masters Degree in Health Promotion. During this time, she realized she had a real passion for nutrition and learning more about how it can be used to help prevent and treat diseases, and most of all, improve quality of life. Shannon went back to school to earn her degree in Nutrition Sciences and since then has worked as a Registered Dietitian in a variety of settings and with a variety of age groups, ranging from preschoolers to seniors. Shannon has worked in public health, corporate wellness, and most recently in private practice. Shannon is also a Certified Diabetes Care and Education Specialist and a Certified Health Education Specialist and is a member of the Academy of Nutrition and Dietetics and American Association of Diabetes Educators. In addition, she earned a Certificate of Training in Obesity Interventions in 2018. She has given numerous health seminars and led programs on topics such as men’s and women’s health, stress management, tobacco cessation, diabetes, and weight management to a wide range of audience sizes.
Shannon truly feels that it’s what you’re doing “most of the time” that matters, and welcomes the opportunity to help you improve your quality of life and feel better. As a dietitian, naturally Shannon recognizes the importance of nutrition, but also takes into account the impact that other factors, such as physical activity and stress, have on your health. There are many factors that go into deciding the types of foods you eat, and Shannon can help you navigate through any barriers and decide which eating plan is the best for you. Sometimes people know “what” to eat, but may need help figuring out how that fits into their life. In addition, Shannon can help you work on changing your behaviors by exploring some of your triggers for eating, which is key to long-term success. Whether your goal is to manage a disease, prevent a disease, or simply “LiveWell,” Shannon can help! Shannon works at our offices on North Rainbow and East Sahara. *Please note Shannon is not currently taking new patients*

Elisabeth Byers, RDN, LD, CDCES, CPT
Beth grew up in Northern California. When she was a teenager, she was one of only a few obese children in her high school. She had the idea that she would find a “magic pill,” become rich and famous and no one would have to suffer from being overweight again! By the time she was in college, her personal weight loss journey proved to her that lifestyle choices of diet and exercise were the key to weight management and her interest in nutrition and dietetics was born.
She completed her BS degree in Nutrition and Dietetics at the University of New Mexico (UNM). An intern rotation at a diabetes clinic taught her that Type 2 diabetes and weight management are closely related. Her passion for diabetes prevention was ignited and she became a Certified Diabetes Educator (CDE). With an interest in physical activity, she became a Certified Personal Trainer (CPT) through the American College of Sports Medicine (ACSM).
While diabetes and weight management education have always been the core of Beth’s career, she has also had the opportunity to work in a variety of settings such as hospitals, dialysis clinics and skilled nursing facilities. Since 2022, Beth has recertified as a Diabetes Care and Education Specialist (CDCES) and relocated to Las Vegas, Nevada.
Beth believes that education is key in understanding how food and exercise impact health. She is passionate about helping people recognize how the smallest of changes based on individual preferences can produce large lifelong results. Beth works at our North Rainbow office.

Suzanne has had an interest in nutrition and health from an early age when her mom taught her healthy eating habits she learned through various nutrition sources. They also enjoyed running and aerobics classes together which taught her the importance of physical activity in obtaining health. After taking a nutrition class at the community college, Suzanne’s interest in helping others grew.
She graduated from the University of California, Davis with a BS in Dietetics and then moved to Arizona to complete her internship. Soon after finishing the internship Suzanne moved to Henderson where she worked as a Dietitian for more than 16 years in the clinical setting helping high risk patients manage their disease through nutrition therapy. After taking some time off to raise her three children, Suzanne returned to school to obtain a Masters degree in Nutrition and Human Performance.
Suzanne is excited to start her career in private practice helping others who are motivated to become their best selves. She believes with support and the proper tools, improved health outcomes are possible for everyone. Jacqueline West, MS, RDN, LD
Jacqueline West is a Registered Dietitian with a Master’s in Nutrition Science and a deep passion for holistic, culturally grounded healing. Mentored by the late Dr. Sebi, she brings ancestral wisdom, herbal therapies, and non-Western food traditions into modern nutrition care—offering her clients more than the standard, clinical approach.
Known for challenging the “one-size-fits-all” model, Jacqueline blends the science of nutrition with powerful, underutilized healing strategies rooted in culture, nature, and tradition. She dives deeply into the connections between food, cellular health, inflammation, and longevity—empowering patients with knowledge and options often overlooked in conventional medical settings.
Her mission is to bridge allopathic and medical nutrition therapy with functional, naturopathic, and culturally relevant care—getting to the root cause of chronic conditions and creating space for true healing through food and mindset. Jacqueline works at our North Rainbow and South Rainbow locations.

Wendy is passionate about the role of nutrition on the front lines of disease prevention and resolution. Nutrition and lifestyle are the cheapest and easiest ways to reclaim health and vitality. She helps clients own their bodies and decide their destiny. She believes that small changes produce big results and prioritizes meeting clients where they are… plus she adds a little bit of fun along the way to make the journey even better.
Wendy grew up in Wyoming with a “granola mom” who is a cancer survivor that loves healthy food, sunshine and self-healing. Naturally this led Wendy to alternative and complementary healing modalities such as homeopathy, herbology, and aromatherapy where she informally practiced on friends and family for a decade while she also independently studied nutrition. She decided to make it official by going back to college where she graduated summa cum laude with a Bachelor of Science in Nutrition Science from Kaplan University and cum laude with a Bachelor of Science Nutrition Sciences from UNLV.
After her internship at the Veterans’ Administration Medical Center in Las Vegas, her professional life found her in clinical nutrition where she felt a pull to connect more deeply with patients and to establish enduring and compassionate relationships. She pursued a career working with clients with disabilities. This filled her heart as she worked with very special people. She is excited to bring her love of helping others to the private sector where she seeks to connect with individuals who want to find their best selves in all areas of life. Wendy works at our North Rainbow location.
